
Walnut Sauce - with Pasta & Veggies and Tempeh
recipe from "The Urban Vegan: 250 Street-Smart, Animal-Free Recipes"
Dinner tonight was done - start to finish - in 15 minutes flat.
I simmered the tempeh in water and soy sauce as the pasta cooked in salted water. I added the green beans and broccoli to the pasta water for the last few minutes of cooking. After about 10 minutes of simmering, I dry fried the tempeh in a cast iron skillet.
While the pasta was cooking, I made Walnut Sauce, which is an Urban Vegan tester recipe. Very quick, very easy, super yummy. Did I mention... 15 minutes???
Yum-a-licious!!

I've never wanted to be a tester before and I was always happy to wait to see the recipes once the cookbook comes out. With all your posts about Urban Vegan's tester recipes, I am kicking myself for not trying to be a tester. I literally can not wait to see all these great recipes!
Glad you are starting to feel better. I can't stand it when people pass around illnesses...if you are sick, stay home!
