Holy Shiitake! This is, by far, my favorite Urban Vegan tester recipe. This version is even better tasting (and much better for you) than the original!

When I was a wee girl, I used to make myself boil-in-a-bag chipped beef and dump it all over a few slices of white toast. A lot. Highly nutritious. Yes, I know.

Then after I was married, I found dried beef. Good bye, boil bags. Hello homemade. We ate this occassionally for years. So. bad. for. you. Ugh!

And to be honest, chipped beef was one of the things I missed most when I stopped eating meat. I recall one morning that we went for breakfast with my husband's family at a local diner. My BIL ordered chipped beef, and without thinking I almost said, "I'll have that, too!" Almost.

Now it is back in my life. And it is healthy. And it is gooooood! My husband and I love mushrooms. My kids don't. Well, the planets must have been aligned today. Kids weren't home. Shrooms were on sale. And this recipe needed to be tested.


Here's how good it was. My husband sometimes thinks I am a nutter for photographing our dinner to post on the internet. Today, as I sat down to eat he told me to hold still a minute so he could get a picture of my plate on his phone to show his friend at work.

Yeah, it was that good.

I grew up on that stuff...and that looks better in more ways than I can count. Even factoring out that our old version was meat.

I had never heard of chipped beef until now, so I googled it, bleuch! But your mushroom dish looks much yummier :)

I'm *so* glad you liked this! I love anything with mushrooms, and as you can see, I also love bad pubs, so this was a no-brainer.

HPP... creamed chipped beef is not very pretty to look at, but boy was it yummy.
